Bitter Gourd Anchovies February 22, 2007

 Indonesian Dish  

Bitter gourd is quite a common veggie here, I’ve seen them almost in every market I go.  They look exactly the same as the ones back home in Indonesia – large curvy with deep green color. Not as bitter as many people would think, with a proper cooking, this can be quite a delicacy!


  • Bitter gourd – properly washed, de-cored, sliced and soaked for 10 mnts in salted water to get rid of its bitterness

  • A handful of dried anchovies, also soaked in hot water

  • Garlic 3 cloves, roughly chopped

  • Large onion 1 pcs – roughly chopped

  • Tomatoes 2 pcs – roughly chopped

  • Galangal 1 cm or half tsp of powdered galangal

  • Bayleaf 2 pcs

  • Pinch of salt, sugar, pepper and fish sauce to taste


  1. Deep fry anchovies in hot oil separately, then set aside

  2. Heat 2 tbsp of oil, stir fry garlic and onions until golden brown

  3. Add bitter gourd, close the lid, turn up the fire

  4. Throw in tomatoes, galangal, bayleaf, salt, sugar and fish sauce

  5. Mix in the fried anchovies
